The Roaster's Notes: When these beans came in from Hacienda La Amistad — a third-generation, family-run organic estate nestled in the highlands of Coto Brus — we knew we had something special. We ran three roasts: a Light-Medium, a Medium, and a Dark. The Medium is genuinely great. But the Dark? That's the one that stopped us in our tracks. It carries that medium body typical of high-altitude Costa Rican SHB, but the dark roast draws out something magical — a gentle chocolate warmth, a clean sweetness, and a vanilla note that lingers just long enough. Splash in a little honey and a dash of warm milk, and you've got s'mores. No campfire required (though it helps). A cousin to our honey-processed Tarrazú Costa Rican, this one carries that same North Georgia Pura Vida spirit.
