We're not a corporate coffee brand. We're just two people who can't sit still — obsessively crafting small-batch roasts and one-of-a-kind goods from the hills of Ellijay, Georgia.
Ellijay Trading Co. is the creation of Matt — the Roaster, Builder, Pit Master, and occasional spice maniac — and his wife, Susan, the Sales Strategist, Photographer, Dog Wrangler, and the one who makes sure we actually sell something.
We're not corporate purveyors. We're just two folks driven by one simple obsession: making stuff that is fun. And yes, if you step outside, you may hear our four ridiculous rescue dogs barking in the background.
The Coffee Spark - Why We Do This
The journey into coffee — like many of our projects — started with a challenge (or maybe curiosity). We needed coffee that was truly fresh, unique, and worth the effort and $18 we were spending. For Matt, who's happiest when learning, failing, and mastering a process, the meticulous craft of small-batch roasting was an immediate obsession.
Susan, with her artistic and eclectic eye and relentless drive, pushed the vision forward — ensuring our craft finds its way into the right hands.
We believe in hard work, the love of God and family, and that the best moments are found in a ridiculously good cup of coffee (or maybe some delicious BBQ and a cold brew — the adult kind).
The Maker Manifesto - What We Make
So, where does a Product Consultant and a Sales Strategist find time to roast coffee and build heirloom pieces? Matt runs BluHound Solutions, a consultancy focused on product excellence. That pursuit of repeatable quality, precision, and the perfect process is the same engine that runs our small roastery.
We brought that professional dedication to sourcing the best beans and controlling the roasting curve — ensuring that even if Matt screws up the latest spice blend, the coffee is always flawless (maybe not always). Susan's eye for beauty and her sales instincts ensure every piece of furniture, every photo, and every coffee bag connects with people who care about quality.
