The Roaster's Notes: This is a Grade 1 Organic from the Amazonas region of Peru — smallholder farmers cultivating high-altitude beans using sustainable, chemical-free methods, then put through the Swiss Water Process to remove 99.9% of the caffeine without touching a single chemical. What's left is the full flavor profile, intact. Dark chocolate, brown sugar, nuttiness, and that blackcurrant brightness — all still there, all still singing. The roast room smells like oatmeal cookies coming out of the oven, and the finished bean smells like the cup you actually want to drink. We take it to a full city roast where the profile locks in perfectly. Pour it however you like — it handles everything.
