The Roaster's Notes: This is a fully washed Bourbon from the Kawa Zamurabawe Washing Station in Bururi, Burundi — grown at 1,610 meters near Lake Tanganyika by 801 smallholder farms, each less than a hectare. The altitude, the volcanic soil, and the meticulous cherry selection produce a cup that's clean and structured in a way that's hard to fake. We pull it right at the edge of second crack, where the nuttiness is dialed in and the cacao tones come forward without losing the coffee's natural brightness. It's a Roaster's Reserve for a reason — this is the kind of bean that reminds you why you started roasting in the first place.
