The Roaster's Notes: This AAA-grade, Fair Trade Organic Bourbon comes from the San Juan Cooperative in the Caranavi province of Bolivia — 40 family farms growing Criollo, Caturra, and Catuai Rojo between 1,400 and 1,800 meters. High altitude, wet milled, sun dried, and seriously clean. We bring it up approaching second crack, which is where the body really opens up and that creamy milk chocolate character comes forward. It's a versatile bean that tolerates a range of roasts, but trust us — let it develop. The patience pays off. This one earned its place in the Reserve.
